I’ve been cooking up a storm this week. On Sunday, well Saturday actually, my husband was talking with one of our friends and he invited him over for dinner on Sunday. Suddenly my husband is going out and buying fish to grill on the barbecue.
My husband really doesn’t eat fish, but our friend does, so I thought that perhaps our friend had suggested grilling fish. Nope. it was my husband.
You see, he’s been with me to several of my appointments with my pain doctor and lately she’s been suggesting that I try a macrobiotic diet because that’s supposed to help with pain. I’m still looking for some good information on macrobiotic diets but I do know that fish can sometimes be a large component of this diet.
I think my husband was thinking of that when he of all people suggested we have fish for dinner. I like fish but I’ve always had trouble getting him to eat it, so I either cook it for myself and cook him something else, or more often, I just don’t cook fish at all.
On Sunday evening we had grilled halibut, steamed asparagus and a tossed salad. We enjoyed the meal so much that on Tuesday night we had grilled lemon pepper catfish, grilled potatoes and veggies, and a tossed salad.
I took photos of our meals as I prepared them, as we cooked them, and right after they were served. I think I’ll write up some posts with the recipes for the fish and my grilled potatoes and veggies. I think some of you will like them.
