Time to cook

I’m starving.

With Chris away for the night I have to come up with a meal for one. Hmmm what should I have.

We’ve been eating a lot of baked skinless boneless chicken breasts lately – not every day, but several times a week.

Early this week I was getting a little tired of the baked version so I marinaded two chicken breasts in a honey mustard marinade after cutting the meat up into bit sized chunks. I think tossed the chicken in our Wok and stir fried the chicken until it was cooked.

Meanwhile I made a salad with mixed greens, fresh tomato and cucumber from the garden, and crumbled feta cheese. When the chicken was finished cooking I put it on top of the salad and we had a very filling chicken salad for dinner.

Perhaps I’ll make that again. I really enjoyed it the other night.

    Mixed greens, fresh tomato, cucumber and feta is my FAVORITE salad! Try throwing in some walnut pieces and a little chopped apple too, SO GOOD.

    Good idea! I haven’t thrown walnuts or even almonds into a salad in a long time. Mmmm cashews are good too, especially if the salad has mandarin segments in it.

    I like apple in a salad but my tummy doesn’t like apple so I never add apple to anything anymore.

    I did consider chopping up a pear and adding it to the salad the other day though.
