I used to be like you and be a big fan of mexican food but rarely ate it. However, I've slowly been teaching myself how to make a variety of the dishes and so, have quesadillas almost far to regularly now. They taste great and they're quick and easy to make. Full of win :).

Mexican food is probably my most favorite type of food. We are fortunate here in Reno to have a few outstanding Mexican restaurants.

I eat at least 3 burritos a week, minimum. San Francisco's Mission District has no shortage of taquerias. I prefer veggie myself and there are many options within the vegetable category for example nopales - cactus, mushroom, grilled this and that, avocado, etc. I also like nachos but I prefer to make them myself. I make fresh salsa - the key is fresh cilantro, good tomatoes and garlic. Mexican food can be very healthy but it is often wayyy to heavy.
